In Thailand, it is wa, or ma-ha; in Laos, va; Cambodia, pring bai or pring das krebey; in Vietnam, voi rung; in the Philippines, duhat, lomboy, lunaboy or other dialectal appelations; in Java, djoowet, or doowet. Uses of Jamun
It may be eaten raw or used to produce tarts, sauces, and jams if the Jamun is large and of good quality, with a sweet or subacid flavor and low astringency. Astringent fruits may be improved by soaking them in salt water or pricking them, rubbing them with a little salt, and leaving them for an hour.
Except for the most subpar fruits, all have been utilized to produce juice that is comparable to grape juice. Allow the juice from cooked Jamun to drain without pressing it; this will make the juice less astringent.
The white-fleshed Jamun has enough pectin to produce a very stiff jelly unless cooked rapidly. The more common purple-fleshed type yields vibrantly colored jelly but lacks pectin and must be combined with pectin-rich fruits like unripe or sour guavas.
A good Jamun juice is great for sherbet, sirup, and “squash.” The latter is a bottled beverage made in India by boiling crushed fruits, squeezing the juice, and combining it with sugar and water.
Those who are diabetic and want to consume Jaman should avoid adding sugar to it.
Jamun vinegar is a clear purple color with a pleasing aroma and a moderate taste that is widely produced across India.
Types of Jamun Fruit
Because of differences in its morphology and organoleptic properties, Pakistan has two distinct forms of Jamun fruits: one called “Ras Jaman”, which is round and dark purple or blue in color with pink, sweet fleshy pulp, and little seeds, as well as the smaller, more acidic “Kaatha Jamun”.
